How accurate are the conversions?

Conversion factors are the exact internationally defined values (for example 1 inch = 2.54 cm exactly, 1 pound = 0.45359237 kg exactly). Results are shown to a sensible number of digits.

Why does temperature need special handling?

Unlike length or weight, temperature scales have different zero points, not just different unit sizes. Converting °C to °F needs multiplication and addition — that's why “wind chill” and oven settings confuse everyone.

What's the difference between GB and GiB?

A gigabyte (GB) is 1,000,000,000 bytes; a gibibyte (GiB) is 1,073,741,824 bytes (1024³). That ~7% gap is why a “500 GB” drive shows as ~465 GiB in your operating system.
